Strawberries and Cream Mug Cake

Add all of the ingredients into a microwave safe mug besides the strawberries. As far as the coconut cream goes, when you open the can, the top should be solid coconut cream and the bottom should be a clear liquid. You’ll want to add 1 tbsp of each to your batter then whisk until smooth. Next, gently stir in your strawberries, cook the cake for about 2 minutes and allow it to cool before adding the whipped coconut cream. Now as far as making the whipped coconut cream goes, remove only the solid cream portion from the can and add it into the bowl of a stand mixer. Add about a teaspoon of a liquid sweetener of your choice, whisk on high until peaks form. Pipe some onto your mug cake, top it off with some extra strawberries and your healthy strawberry cream cake is all done!

Cooking Time: 2 Minutes

Ingredients:

  • 3 tbsp superfine almond flour
  • 1 tbsp coconut flour
  • ½ tsp baking powder
  • 1 large egg
  • 1 tbsp maple syrup
  • 2 tbsp coconut cream
  • 2 fresh strawberries (diced)
